Sowing Good King Henry

Good King Henry, also known as wild spinach, is an easy-to-grow outdoor plant that provides nutritious and delicious leaves. To sow Good King Henry seeds, choose a sunny spot with light, well-drained soil. Avoid overly nutrient-rich soils, as this encourages leaf growth at the expense of seed production.

The best time to sow Good King Henry seeds is in spring, once all risk of frost has passed. Prepare the soil by weeding carefully and loosening it with a fork. Sow the seeds about 30 cm apart and cover them lightly with soil.

Keep the soil moist during germination, but avoid overwatering to prevent seed rot. After germination, thin seedlings if necessary, leaving one plant every 20–30 cm. Harvest the leaves as they grow to enjoy their flavor and health benefits.
