Jerusalem artichoke

Rich in minerals, Jerusalem artichoke is appreciated for its artichoke flavor. It is easy to prepare and can be eaten hot or cold, in soup, fried or as a side dish. It makes a delicious puree. The Jerusalem artichoke is a perennial plant of the Asteraceae family. It comes in several varieties including red Jerusalem artichoke, white Jerusalem artichoke and red Jerusalem artichoke with yellow flesh. Moreover, it is easy to plant this vegetable in a garden.

To sow the plant, simply plant the tubers about 10 cm deep and 50 cm apart. In terms of timing, it is best to plant Jerusalem artichokes between late winter and mid-spring, i.e. from mid-February to mid-April. Because of its large size, it is advisable to plant the Jerusalem artichoke at the end of the vegetable garden. Although it likes sunny places, it tolerates half-shade. Jerusalem artichokes can be grown in all types of soil. However, a contribution in compost will improve its output.

For the maintenance of Jerusalem artichoke, it is necessary to hoe at the beginning of vegetation only then to let it develop. If necessary, stretch a wire between two stakes to support it and water it a little if the soil is very dry. Jerusalem artichokes can be harvested from October onwards by pulling out the tubers with a spade fork. Note that it wilts quickly, so it is recommended to harvest it as needed, especially since it spends the winter in the ground without problems.
