Red beans
Part of the Fabaceae family and of the Phaseolus genus, the kidney bean is a vegetable whose seeds are used only in the pods. Whether fresh or dry, it must be cooked before eating it, to eliminate all the toxicity it contains in its natural state. The chili con carne is certainly the most famous dish with beans. The bean appreciates moderate climates and in France, some varieties can be grown without any particular difficulty. Among these are Rognon de coq and Montezuma red. Varieties such as Sombrero, Crochu de Montmagny, or Montcalme rouge are also suitable.
Red beans are sown in the spring, when there is no risk of frost. Soaking the bean seeds in water for 24 hours will allow a faster emergence. Then, they are placed directly in the garden soil in groups of 4 or 5 with a spacing of 40 cm. The depth should be between 3 and 4 cm. We proceed to a thinning out as soon as the plants are at 8 cm height. The culture of the red bean requires heat, thus a good exposure to the sun. Moreover, it appreciates rich and well aerated soils, but without excessive humidity.
The harvest period of the bean is from July to October. It should be noted that it is not necessary to provide nitrogenous fertilizer, since the bean has the capacity to bring it to the soil itself.
