Winter greens are a vegetable that's packed with health benefits. Rich in iron, vitamin C and fibre, it is excellent for boosting the immune system, aiding digestion and preventing anaemia. What's more, it's low in calories, making it an ideal ally for those watching their figure. It can be cooked raw in salads, steamed, stir-fried or added to soups and stews. Its mild flavour goes perfectly with other vegetables, aromatic herbs and cheeses.To sow winter pinard, it is advisable to do so in spring, from March onwards. The soil must be rich in organic matter, well worked and well drained. The seeds should be sown in rows 30 cm apart, about 2 cm deep. After emergence, it is important to thin out the plants to leave only one seedling every 10 cm.
