White beans (flageolets)

From the Fabaceae family, the white bean is native to the Americas. From the Moroccan tagine to the French cassoulet, it can be found in various cuisines. It is also delicious in salads with chard leaves or crushed in hummus. There are more than a hundred species of beans, including the Tarbais bean, which is so soft, and the Lima bean, which is more floury, not to mention the famous flageolets (which are more green because they are harvested before they are fully mature). Easy to grow, this vegetable has many nutritional benefits.

The white bean can be planted in the vegetable garden as soon as the soil temperature exceeds 12 degrees. The planting schedule may vary slightly depending on the variety chosen. The best time is to sow the seeds in early spring, spacing the plants at least 25 centimeters apart and keeping a distance of one meter between each row. A good non-limy, slightly sandy and well aerated garden soil is ideal for bean growth. A good sunshine helps their maturity.

In the vegetable garden, as soon as the plants exceed 25 centimeters, a mulching at the foot is necessary. This is also the time to stake the beans. The plant can grow up to three meters high. It is therefore necessary to provide large stakes or a trellis or a fence that will allow the plant to flourish. The first beans can be harvested two months after sowing.
