How to harvest chicory successfully?

Endive can be harvested in different seasons depending on the variety. Summer chicory is generally harvested in spring or summer, while autumn and winter chicory are harvested in autumn and winter. To harvest chicory, simply cut the leaves with a knife, leaving about 5 cm of the plant in place so that it can grow back.
