How do I sow summer leeks under cover?

To sow summer leeks successfully under cover, it's important to choose a deep container to allow the roots to develop properly. Use individual cups or trays filled with light, well-drained potting soil. Sow the seeds about 1 cm deep and space them a few centimetres apart to avoid them touching.

Sowing under cover is generally done in spring, when frosts are no longer a concern. Be sure to maintain a constant temperature of between 15 and 20°C to encourage germination. Water regularly but sparingly to avoid excess moisture that could rot the seeds.

Once the leek plants are about ten centimetres tall, you can transplant them into the ground, taking care to space them about 10 cm apart. Make sure you water them well, especially in dry periods, to encourage their growth.

How do I harvest summer leeks?

Summer leeks can be harvested from August to November. To harvest them, simply pull gently on the plant, holding it at the base. It's best to harvest leeks as and when you need them, so that they retain all their flavour and freshness. Leeks can be stored for up to two weeks in a cool, dry place. It is best to store them in a dark place, away from light, to prevent them turning green. To prolong their shelf life, you can also freeze them after washing, blanching and slicing.
